Cake Recipe For Mother’s Day

Looking to spoil mum on Mother’s Day? How about you and the kids bake a cake and surprise her? Here  is a recipe for a nice Victoria Sandwich Sponge cake which you can decorate or leave it plain.

What you will need:

For the cake:

200g caster sugar
200g softened butter
4 eggs , beaten
200g self-raising flour
1 tsp baking powder
2 tbsp milk

For the filling:

100g butter , softened
140g icing sugar , sifted
drop vanilla extract (optional)
340g jar good-quality strawberry jam

1. Heat the oven to 190C/fan 170C/gas 5
2. Butter two 20cm sandwich tins and line with non-stick baking paper
3. In a large bowel, beat all of the cake ingredients together until you have a smooth, soft batter
4. Divide the mixtures between the tins, smooth the surface with a spatula or the back of the spoon
5. Bake for about 20 mins until golden brown and the cake springs back when pressed
6. Turn onto a cooking rack and leave to cool completely
7. To make the filling, beat the butter until smooth and creamy then gradually beat in the icing sugar
8. Beat in vanilla extract if you are using it
9. Spread the butter cream over the bottom of ones of the sponges, top its with jam and sandwich with the second sponge on top.
10. Dust with a little icing sugar (if you want to decorate the cake with buttercream icing please see below)
11. Keep in airtight container and eat within 2 days.

How to make butter Icing

What you will need:

100g/4oz Softened Butter
200g/8oz Icing Sugar

How to make:

1. Place the softened butter in a mixing bowl and sift the icing sugar over the top.
2. Cream the ingredients together until smooth
3. Add the mixture to a piping bag and decorate cake
